Low acidity, smooth, earthy and herbaceous. The Pacific Rim, a region of Southeast Asia that includes India and Indonesia, is known for producing coffee with earthy, heavy flavors and low acidity. Viennese roast involves roasting the coffee to the middle of the second crack- this is perhaps the most difficult roast level to master, just moments too long in the roaster will result in too much oil on the bean's surface, and if the roast is finished seconds early no oil will appear.
